The BEST Peanut Butter Bars!

We LOVE peanut butter!!! If it has peanut butter, the odds are that it will be on our favorites list! I mean who doesn't love peanut butter...unless your allergic to peanuts I guess...ANYWAY this recipe is easy, quick, and super delicious! I must warn you though, it can be very difficult to stop eating it and once you make it the first time, you're family will NEVER stop asking for it!

INGREDIENTS
1 C Sugar
1 C Firmly Packed Brown Sugar
1 C butter (softened)
1 tsp vanilla
2 eggs
2 1/2 C smooth peanut butter
2 C oatmeal (old fashioned oats, not quick oats)
2 C flour
1 tsp baking soda
1 tsp salt
FROSTING
1/2 C butter (softened)
1/4 C milk
1 tsp vanilla
3 Tbl cocoa
2-3 C confectioners (powdered) sugar
INSTRUCTIONS
Preheat oven to 350 degrees Fahrenheit
In your standing mixer, cream butter, sugar, and brown sugar together.

Add vanilla, eggs, and 1 C peanut butter, mix.

Add oats, flour, baking soda, and salt and mix until combined.

Spray a cookie sheet with non-stick cooking spray and spread out dough in an even layer.
Bake for 15 minutes or until lightly golden brown.
Remove from oven and the spoon remaining peanut butter (you might need more depending on how thick of a layer of peanut butter you want-we always use more.
When peanut butter has melted (I usually place in the cooling oven with door slightly open to speed up this process) spread into even layer on top of bars.

Let cool unit peanut butter has set up. (Place in freezer or fridge to speed up this process)
When cool, in a medium bowl, mix together frosting ingredients with a hand mixer until smooth and spread on top of bars. Don't forget to lick the beaters!
Cut into bars and ENJOY!
Store in air tight container for up to a week.
